MOCKINGBIRD POUND CAKE Preheat oven to 325 degrees F. Lightly grease and flour a 12 cup Bundt Pan 1 cup butter, softened 1/2 cup all-vegetable shortening 3 cups granulated sugar 6 large eggs 3 cups all-purpose flour or cake flour 1/2 teaspoon salt 1/2 teaspoon baking powder 1 cup coconut milk or substitute with whole milk 1 teaspoon coconut extract 1 teaspoon pure vanilla extract 1/4 cup powdered sugar to dust top of baked cake 1. Beat butter and shortening at medium-speed with an electric mixer until creamy. Gradually add 3 cups granulated sugar beating at medium speed until light and fluffy. 2. Add eggs, 1 at a time, beating until yellow disappears, about 15 seconds. 3. Whisk together flour, salt, and baking powder; add 1/3 at a time to butter mixture alternating with 1/3 coconut milk at a time beat on beating on low speed and scraping bottom and sides of bowl until all flour mixture and coconut milk are well blended into the butter mixture. 4. Spoon cake batter evenly into prepared baking pan. Run skewer or butter knife through cake batter to remove any air pockets. Tap pan on solid surface several times to remove any additional air pockets. 5. Bake 325 degrees for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a cooling rack for 15 minutes. Remove from pan. Cool completely on wire rack, about 1 hour. Dust cake evenly with powdered sugar, optional.
